How do you eat well in the Badlands once the ground has closed?
Join the Theodore Roosevelt Presidential Library for Midwinter Table, a seated dinner celebrating the winter larder: salted, smoked, cured, cellared, and foraged.
Executive Chef Candace Stock of Salt + Scoria built the menu around the people who have always found a way to eat well through a Badlands winter. Her courses follow a line from Indigenous foodways to homesteading and ranching to the region’s growers today, with chokecherry, prickly pear, blue corn, prairie sage, and beef raised close to home. Every course highlights a regional producer, and the producers will be at the table to share how their food got there.
