Chef Candace Stock brings tradition to the table in this cooking segment featuring foraged ingredients and Indigenous knowledge. Incorporating native-grown corn, locally grown oats, and foraged fruits, herbs, and nuts, Candace prepares an Indigenous Corn Pudding — a nourishing dish rooted in cultural history.

Corn Pudding Recipe:

Ingredients:
1 tsp cedar bough
4 Tbsp butter
1 ¼ cup milled black corn
4 cups water
1 tsp salt

Make Corn Pudding:
-Melt butter in a pan on medium heat. Once melted, add cornmeal to toast.
-Once the cornmeal is lightly toasted, add water, and bring to a boil. Stir rapidly until the corn is suspended in the water and doesn’t sink to the bottom of the pan.
-Reduce to a simmer and continue to stir regularly. Cook for 10 min, then remove from heat and keep covered.
-Once cooked, season with salt.

Roasted Aronia Berries and Squash Recipe:

Ingredients:
2 cups diced delicata squash
¾ cup aronia berries
2 Tbsp butter
2 tsp salt

Make Roasted Aronia Berries and Squash:
-Preheat oven to 350°F.
-In a bowl, stir together berries and squash, toss with oil, then spread evenly on a sheet pan
-Bake for 15 minutes

Granola Ingredients:
1 cup rolled oats
¼ cup pure maple syrup
¼ cup curly dock seeds
2 Tbsp coconut oil
1 tsp cinnamon
¼ cup hemp hearts
¼ cup pepitas
1 Tbsp smoked sea salt
1 Tbsp vanilla bean powder

Make Granola:
-Preheat oven to 320°F.
-Mix all ingredients together, then spread on baking sheet
-Bake for 35 minutes, stirring every 10 minutes to ensure the granola is cooking evenly.

Prepare garnishes:
Toasted cranberries
Toasted black walnuts
Candied spruce tips
Dried wild flowers
Sea Salt

Serve dish:
-Spoon corn pudding into the dish, topping with the roasted berries and squash and granola. Garnish with the black walnut and cranberry mixture. Enjoy!
